If it is a document like MS Word is a document then you would need to find a hack that you would use on the registry of your computer that would allow you to use the Zune as a hard drive.
The video converter you use will often depend on what kind of video you are trying to convert. You will need to determine the video file type then search for a converter that you can use. For example if I wanted to convert the video format .flv for Zune I do a search for flv to Zune converters.
